Vegetables are allowed and approved in the Dukan Diet ®! Crispy and deliciously flavoured, these snack vegetables are real vegetables without added fat. Gently lyophilized, they conserve fully their flavour and nutritional values. Onions and Yellow Peppers - Two vegetables for a gourmet snack or appetizer, colorful and tasty:

  • The yellow pepper is flavoured bolognese
  • The grilled onion is flavoured cream and onion

The process
Lyophilization or freeze-drying is a process which extracts the water from foods. It is based on the sublimation principle (process of transformation from the solid phase to gaseous phase without passing through the liquid phase).
Here are the different steps for freeze-dried vegetables:
  1. Freeze food so that the water inside turns into ice.
  2. Sublimate the ice directly into water vapour.
  3. Collect the water vapour.
  4. Once all the ice is sublimated, the food is freeze dried.

This technique keeps the volume, the organoleptic properties and the nutritional quality of the vegetables.

Note also, most freeze-dried foods rehydrate very quickly when they are placed in the mouth. This is due to their porous texture. Water can easily take its place in the molecular structure of the food.

Grilled, seasoned and freeze-dried yellow sweet peppers (33%): Freeze-dried grilled yellow sweet pepper (94%), wheat flour, salt, spices and aromatics, whey powder, natural flavourings, sucrose, tomato, dehydrated lemon juice, anti-caking agents: colloidal silica (E 551), magnesium carbonate (E 504i); olive oil.
