Natura Toscana pasta is made exclusively from an ancient durum wheat known as “Senatore Cappelli”, grown in Italy at the dawn of the 20th century, and subsequently replaced with more productive varieties.
Today, “Senatore Cappelli” wheat has been rediscovered in only a few privileged areas in Italy, including Tuscany, in virtue of its excellent flavour qualities.
The characteristics of this wheat and the slow drying process used, give the pasta a full-bodied consistency and a rich taste that hails back to the flavours of times past, when nature ruled the pace of the day.
Natura Toscana Senatore Cappelli “semi wholemeal” pasta is made with “semolato”, or semi-refined durum wheat, giving it a lighter colour than wholemeal durum wheat, but a rich flavour and a greater fibre content than a more refined “white” durum wheat pasta.
